Coconut Ice Recipe


Ingredients:

  • 1 cup mashed potato
  • 3 ounces Copha
  • 1 ½ lb icing sugar
  • 12 ounces shredded coconut
  • pink food colouring

Directions:

  1. Push mashed potato through a sieve into a mixing bowl.
    Melt copha and add to potato.
  2. Mix in coconut and sifted icing sugar with a fork.
    Press half the mixture into a
    dish.
  3. Colour the remaining mixture pink and press on top.
  4. Put in the fridge to set. When it is nearly set, cut into sections.
