Coconut Ice Recipe
Ingredients:
- 1 cup mashed potato
- 3 ounces Copha
- 1 ½ lb icing sugar
- 12 ounces shredded coconut
- pink food colouring
Directions:
- Push mashed potato through a sieve into a mixing bowl.
Melt copha and add to potato. - Mix in coconut and sifted icing sugar with a fork.
Press half the mixture into a
dish. - Colour the remaining mixture pink and press on top.
- Put in the fridge to set. When it is nearly set, cut into sections.
