Sweet Potato and Sausage Soup


  • olive oil
  • 1 large onion, diced
  • 1 stalk celery, diced
  • 2 smoked sausages, sliced
  • 4 sweet potatoes, peeled and diced
  • 1 can diced tomatoes
  • 6 cups beef stock
  • salt and pepper to taste
  • day old bread torn in chunks


  1. Place large stockpot on stove over medium-high heat and add olive oil, onion, celery, and sliced smoked sausages. Saute until onion is translucent and sausages browned.
  2. Add sweet potatoes, tomatoes, beef stock, salt and pepper. Bring to boil, reduce heat and simmer until sweet potatoes are tender. Taste and adjust seasonings.
  3. To serve, ladle into soup bowls and top with torn pieces of bread.
